I seriously had a really bad day yesterday. I am finding more and more people that I thought I knew – really are only in it for themselves. The more things change, the more they stay the same. I have to learn to not be so open and trusting to everyone. The people in my life should meet the requirements I set and earn the right to be trusted — no more settling for half ass’ed quality people.

 

I really needed a good hard workout this morning and sure enough — it was waiting for me. I visualized some of the anger inside to push myself –hoping it would leave my body.  I will let you know.

My friend Jason posted this Paleo Cookie recipe. They look pretty tasty –I think I will try to make them soon. Let me know if you do.

Paleo Cookie:
2 Cups walnuts
1/8 cup raw, unfiltered honey (more or less to taste)
1 Tb. cinnamon
2 egg whites, whisked till frothy

Grind nuts and cinnamon in blender or food processor. Stir in honey.
Combine with egg whites. Drop by teaspoon on oiled (coconut) cookie sheet. Bake at
350 degrees 15 minutes. Cookies will be soft; do not overbake. Makes 15
cookies.

Recipe: Easy Paleo Pumpkin Bars

Easy Paleo Pumpkin Bars
Ingredients
15 oz can Organic Pumpkin
2 Eggs
1/3 cup Egg Whites (I used Egg Beaters “whites”)
1/3 cup Agave Nectar Amber
2 cups Almond Flour
1 tsp Pumpkin Pie Spice
1/2 tsp Baking Powder
1/4 tsp Salt (I used sea salt)

Directions
combine in blender/ food processor:1 can (15oz) pure pumpkin puree1/3 cup egg white2 large eggs1/3 cup agave nectarblend/pulse until whippedcombine in a bowl:2 cups almond flour1 tsp pumpkin pie spice (ginger, nutmeg, allspice)1/4 tsp sea salt1/2 tsp baking powderadd to blender and mixBake in a greased pan @ 350 degrees for 35 mins. (I put mine in a 9 x 13 pan so they were thinner and cooked them only about 30 min)

Original Fudge Babies

(Serves… depends on how good bad non-existent your self-control is)

  • 1 c walnuts (120 grams)
  • 1 and 1/3 cups pitted dates (230 grams) (If you want a sweeter result, up the proportion of dates.) (If you’re unsure as to what dates to use, see fudge baby FAQ post)
  • 1 tsp vanilla extract
  • 3-4 tablespoons cocoa powder, depending on how chocolatey you want the balls to be (I used 4T extra dark)

1. Chop/blend all the ingredients, using a food processor, Magic Bullet, etc.  (No need to blend the dates first; I just blend everything all at once.)
2. Roll into cutey-pie little balls.  (Use plastic wrap if you wish.) Or, if you want true brownies, shape the dough into bars!

Version 2:

Hot Cocoa Fudge Babies

I’ve been toying around with the original recipe.  Here is my newest-favorite variation:
30 grams cashews, 80 grams dates, 5 grams (1T) dark cocoa powder.
Blend.  Even fudgier than the original! :)
(Add mint extract + cacao nibs and you’re in Wild Bar territory.
And if you leave out the cocoa powder, you have a homemade cashew cookie Larabar!)

 

Review of Tropical Traditions: Coconut Oil

I have read about the benefits of coconut oil for a while & how some only cook with it instead of olive oil. I am not a huge fan of coconuts –never was one to like the Mounds or Almond Joy candy bars, don’t like coconut flakes on anything, nor do I like coconut cream pie! Don’t like Coconut — period! So I was hesitant to try anything with it as the main ingredient — but then I tried Coconut Water, then Coconut Milk, then Coconut Milk Dairy Treat/Ice Cream and they were all pretty darn good. A faint coconut flavor but not overpowering — dare I say it’s pretty good!

The nice folks at Tropical Traditions recently sent me a jar of Coconut Oil to try. I decided to pan grill up some chicken thighs with veggies as my first experience!

I added a small spoon full to pre-heated grill pan, then added a bunch of veggies — yellow peppers, onions, mushrooms, garlic with some garlic salt. I let them saute a bit and then added the boneless chicken thighs. . The Coconut Oil adds a light flavor to the dish — and I gotta say – It was so delicious. Thumbs Up!

I made a similar version a few days later, but cooked chicken thighs in olive oil and another batch with the coconut oil. You are probably thinking that that was an odd thing to do — but I was making  a dish for the kids, and then another batch for a few day’s worth to add to my lunch salads.  So my batch was in coconut oil.  I didn’t mention it while I was cooking and Scotty had the overall kids meal and then unknowingly had some of the chicken cooked in coconut oil.  After dinner, he mentioned how delicious and better tasting the 2nd batch was! Thumbs Up from both of us!

Based on those 2 meals – I would heartily recommend giving Coconut Oil a try! I plan to use it regularly  thanks to Tropical Traditions!

Why use Coconut Oil? It’s not only good to cook with you can use it on your skin! There are so many benefits of Coconut Oil (it’s a long list) –so be warned!

You can also bake with coconut oil — freecoconutrecipes.com has a good collection of recipes to get you started, including Gluten Free Chunky Monkey Muffins! With stuff like that to try — there is no excuse!

I’m going to try some other recommended recipes and uses and will share those experiences as they happen as a follow up!

Paleo Taco Salad

Tried a Paleo taco salad today from a xfit site I found online.

I thought it was pretty tasty once I added some salt and pepper – the kids weren’t so thrilled with it but they don’t like tacos in general.

Taco Seasoning for Ground Meats:
1 TBSP Chilli Powder
1 TBSP Cumin
1 TBSP Onion Powder
2 tsp Oregano
Salt
Pepper
A pinch of red pepper flakes
diced onion
diced red and yellow peppers
sliced green onions
Organic Salsa (Muir)

Combine the seasoning mix with 1 cup of water mix well and set aside. In a frying pan brown the ground turkey meat and drain. Next, add the seasoning mix and various cut up veggies. (If it tastes too spicy for you, add some extra water.) Agitate the meat and water mixture continuously while maintaining a medium heat. When the water is evaporated and the meat still looks moist your taco meat is done add the salsa and wait until its all warmed up.

Taco Salad
In a large bowl combine the following items to your personal preference. Mix well, top with fresh squeezed lime juice and enjoy!
Taco Meat (Ground Turkey)
Shredded Lettuce
Nitrate-Free Bacon
Chopped Scallions
Guacamole or Avocado

Pizza Soup Recipe Review

Here’s a pic of my pizza soup just before it was done. And at first glance by my kids –they were like no way ‘I’m not eating that’! I insisted and guess what? They LOVED it.  We all loved it. It was tasty, easy and left very little clean up. This is an A+ recipe in my book!

The only additions that I made was to add a half bag of frozen spinach and mushcrooms in addition to the half bag of broccoli. I figured might as well get as many veges as I can in there!

Eating Paleo

Im going to try the recipe below this evening. I am looking for ways to eat more ‘paleo’.  The Paleo Diet is a way of eating in the modern age that best mimics diets of our hunter-gatherer ancestors – combination of lean meats, seafood, vegetables, fruits, and nuts. Quite a few folks I know have done a ’30 day Paleo Challenge’ and have transformed their mind and body because of it. What do you think?

Paleo Ground Rules:
All of the lean meats you can eat.
All of the fruits and non-starchy vegetables you can eat.
No cereals or grains (wheat, oats, corn, etc.)
No legumes (peanuts, beans)
No dairy products.
No processed food.

10-Minute Pizza Soup.

10-Minute Pizza Soup
Makes two generous servings.
Ingredients:
olive oil
2-3 Italian sausage links
half bag frozen chopped broccoli
3 cups broth (I like to use half beef, half chicken.)
14.5 oz. can chopped tomatoes (I like Muir Glen fire-roasted.)
2-3 teaspoons Penzeys Pizza Seasoning
Directions:
1. Cut the sausage into coins, moons, or dice. I like to make moons, then halve them. They look like little slices of pizza!
2. Heat some olive oil in a saute pan and brown the sausage.
3. Add the canned tomatoes and the pizza seasoning. Stir to combine.
4. Pour in the broth, then add the broccoli. It can be frozen or defrosted; doesn’t matter.
5. Bring to a boil, then simmer for 10 minutes.
6. Ladle into deep bowls, then drizzle with a teaspoon of high-quality olive oil and a sprinkle of black pepper.

Ingredients

2 large red apples, cored and diced
6 dried figs, chopped
2 ribs of celery, diced
1/2 cup fat-free lemon yogurt
2 tablespoons slivered almonds
2 carrots, peeled and grated

Directions
In a small bowl, combine the apples, figs and celery. Add yogurt and mix thoroughly. Serve on separate plates topped with almonds and garnished with grated carrots.
