This recipe was shared by my friend Lori. She left off the dark chocolate icing. They look delicious don’t they?
Chocolate Coconut Doughnuts
10 medjool dates, pitted
1 tablespoon vanilla extract
½ cup coconut flour
½ teaspoon ground cinnamon
¼ teaspoon salt
¼ teaspoon baking soda
1/3 cup cacao powder
½ cup coconut oil, melted
Dark Chocolate, melted (optional)
Preheat oven to 350 degrees. Generously grease a doughnut pan with coconut oil.
Place the pitted dates with 1 tablespoon of water in a heat resistant bowl and microwave on high for 30 seconds. Remove and add an additional tablespoon of water and mash the dates into a paste.
In the bowl of a food processor add date paste, vanilla extract, and eggs. Process mixture to combine. Add coconut flour, cinnamon, salt, baking soda, cacao powder, and melted coconut oil to the bowl of the food processor and mix until all ingredients are well incorporated. Stop to scrape down sides of bowl.
Fill the doughnut pan circles about 2-3 of the way full with batter. Bake for 15 to 20 minutes or until a toothpick inserted comes out clean. Remove from oven and cool on a wire rack.
Carefully remove doughnuts from the pan and continue to cool.
If topping them with dark chocolate, place chocolate in a double broiler or microwave safe bowl and heat until melted. Carefully place the top of the doughnut face down in the chocolate to evenly coat the top. Lift and turn over carefully and place the doughnut chocolate side up on a wire rack or piece of waxed paper to dry. If you would like you can also add dark chocolate shavings to the tops of the doughnuts.
I seriously had a really bad day yesterday. I am finding more and more people that I thought I knew – really are only in it for themselves. The more things change, the more they stay the same. I have to learn to not be so open and trusting to everyone. The people in my life should meet the requirements I set and earn the right to be trusted — no more settling for half ass’ed quality people.
I really needed a good hard workout this morning and sure enough — it was waiting for me. I visualized some of the anger inside to push myself –hoping it would leave my body. I will let you know.

My friend Jason posted this Paleo Cookie recipe. They look pretty tasty –I think I will try to make them soon. Let me know if you do.
2 Cups walnuts
1/8 cup raw, unfiltered honey (more or less to taste)
1 Tb. cinnamon
2 egg whites, whisked till frothy
Grind nuts and cinnamon in blender or food processor. Stir in honey.
Combine with egg whites. Drop by teaspoon on oiled (coconut) cookie sheet. Bake at
350 degrees 15 minutes. Cookies will be soft; do not overbake. Makes 15
I have read about the benefits of coconut oil for a while & how some only cook with it instead of olive oil. I am not a huge fan of coconuts –never was one to like the Mounds or Almond Joy candy bars, don’t like coconut flakes on anything, nor do I like coconut cream pie! Don’t like Coconut — period! So I was hesitant to try anything with it as the main ingredient — but then I tried Coconut Water, then Coconut Milk, then Coconut Milk Dairy Treat/Ice Cream and they were all pretty darn good. A faint coconut flavor but not overpowering — dare I say it’s pretty good!
The nice folks at Tropical Traditions recently sent me a jar of Coconut Oil to try. I decided to pan grill up some chicken thighs with veggies as my first experience!
I added a small spoon full to pre-heated grill pan, then added a bunch of veggies — yellow peppers, onions, mushrooms, garlic with some garlic salt. I let them saute a bit and then added the boneless chicken thighs. . The Coconut Oil adds a light flavor to the dish — and I gotta say – It was so delicious. Thumbs Up!
I made a similar version a few days later, but cooked chicken thighs in olive oil and another batch with the coconut oil. You are probably thinking that that was an odd thing to do — but I was making a dish for the kids, and then another batch for a few day’s worth to add to my lunch salads. So my batch was in coconut oil. I didn’t mention it while I was cooking and Scotty had the overall kids meal and then unknowingly had some of the chicken cooked in coconut oil. After dinner, he mentioned how delicious and better tasting the 2nd batch was! Thumbs Up from both of us!
Based on those 2 meals – I would heartily recommend giving Coconut Oil a try! I plan to use it regularly thanks to Tropical Traditions!

Why use Coconut Oil? It’s not only good to cook with you can use it on your skin! There are so many benefits of Coconut Oil (it’s a long list) –so be warned!

I’m going to try some other recommended recipes and uses and will share those experiences as they happen as a follow up!

Tried a Paleo taco salad today from a xfit site I found online.
I thought it was pretty tasty once I added some salt and pepper – the kids weren’t so thrilled with it but they don’t like tacos in general.
Taco Seasoning for Ground Meats:
1 TBSP Chilli Powder
1 TBSP Cumin
1 TBSP Onion Powder
2 tsp Oregano
A pinch of red pepper flakes
diced red and yellow peppers
sliced green onions
Organic Salsa (Muir)
Combine the seasoning mix with 1 cup of water mix well and set aside. In a frying pan brown the ground turkey meat and drain. Next, add the seasoning mix and various cut up veggies. (If it tastes too spicy for you, add some extra water.) Agitate the meat and water mixture continuously while maintaining a medium heat. When the water is evaporated and the meat still looks moist your taco meat is done add the salsa and wait until its all warmed up.
In a large bowl combine the following items to your personal preference. Mix well, top with fresh squeezed lime juice and enjoy!

Here’s a pic of my pizza soup just before it was done. And at first glance by my kids –they were like no way ‘I’m not eating that’! I insisted and guess what? They LOVED it. We all loved it. It was tasty, easy and left very little clean up. This is an A+ recipe in my book!
The only additions that I made was to add a half bag of frozen spinach and mushcrooms in addition to the half bag of broccoli. I figured might as well get as many veges as I can in there!

Hey everyone here is a recipe for my HEALTHY green drink, which can be used as a meal replacement! It is a BIG drink and could be considered 2 servings. Women who are watching their calories can cut the supplements in half, which drops the total calories down to 289.
MY Green Drink (398 calories)
Add all ingredients (listed below) to a blender and blend until combined.
Supplements (218 calories)
o 1 TBSP Ground Flax Seed (40 calories)
o 1 ½ TBSP Hemp Seed (80 calories)
o 1 TBSP Dulse Flakes (8 calories)
o 2 tsp Maca Powder (40 calories)
o 2 TBSP Pea Protein (50 calories)
Fruits & Veggies (180 calories)
o 1 Cup Fresh Kale (30 calories)
o 1 Cup Frozen Spinach (30 calories)
o 1/2 Cup Blueberries (35 calories)
o ½ Small Banana (40 calories)
o 1/2 Cup Frozen Pineapple (45 calories)
o 20 oz. H20

2 large red apples, cored and diced
6 dried figs, chopped
2 ribs of celery, diced
1/2 cup fat-free lemon yogurt
2 tablespoons slivered almonds
2 carrots, peeled and grated
In a small bowl, combine the apples, figs and celery. Add yogurt and mix thoroughly. Serve on separate plates topped with almonds and garnished with grated carrots.
